Chipotle Chicken
In a bowl create a marinade combining a generous amount of ground chipotle with butter, onions and fresh garlic. Place the chicken in an ovenproof dish before piercing the fillets with a fork. Slather the marinade on chicken fillets and allow it to soak into the meat and marinate for a few hours. Once marinated, allow to to cook through before serving with lime juice and a rice salad.
Chipotle & Onion Dip
Sauté onions over a high heat then allow to cool to room temperature. Stir in crème fraîche, cream cheese and ground chipotle until well blended. Serve with corn chips and enjoy!
